I have an older Vestax PCV175 mixer and love it, so I think either of these choices would be good. I'll be honest that I bought a 3 channel just in case (just like you are thinking) and I rarely ever use the third channel. I don't consider it a waste, but if you don't see a need for it now in your mixing you might not need it in the future either. Is there a 2-channel you were looking at as well? I'd say go for either of those, but I'm sure other people will have some opinions too.
