Sample rate error means you've got the wrong # of channels for the recording...
A simple closing and reopening solves tons too. The majority of problems that arise from audacity is when you use up too much temp space. Etc, open up a track and do 4000 edits, after a while things get buggy. Did ya try just doing a short 10 min run or recording to make sure all is fine and all setting are tuned, before you went off and did the full set? Always do tests before recording. Hence "Mic check..1..2..3". No one starts the show before all settings are checked. If all else fails, mix the first half o' the set and then stop the recording. SAVE! start anew and finish with the other half and then just splice the 2 files in postediting. Another tip (if in XP or later) is to open up task manager and go to the processes tab. Right click audacity.exe and set the priority higher. Also, uninstall??? Since when does it need to install? It just friggin runs from where ever you start it. I literally run mine off my USB drive...and it's an old version where running off a USB isn't even an added capability (not sure why it's added to the new version)

hmm i use an external u control device to record right into the usb port. just set the audio device to that....not shure how u have it tho

(the selected sample rate can change on its own, for example when you open an audio file with a strange sample rate - audacity may remember the setting on its next restart.) if that doesn't work, go into the preferences dialog, under the "devices" option. the first dropdown ("interface - host") determines the driver it will use to talk to the sound card, try selecting another option there. if that also doesn't work, start playing around with the "recording device" further down that dialog. try selecting the card itself, or otherwise the audio mapper, or any other options you see there.

you have a soundcard - the line in, mic in and so on sockets on your computer are proof of that. if it's part of the motherboard it's called "onboard sound" but it's still a soundcard.
edit: be aware though, onboard sound usually only supports limited sample rates - i.e 44,100 and often don't support full duplex recording (being able to monitor (hear) what's being recorded as it records)...
